Sticks‘n’Sushi coming to Paradise Birmingham later this year

Award-winning Danish-Japanese restaurant Sticks‘n’Sushi will be opening at Paradise later this year as the estate’s newest hospitality offering. 

Set to open this autumn, the group will be taking a 6,392 sq ft unit on the ground floor of Three Chamberlain Square, facing onto the new public realm on Paradise Street in Colmore Business District.

The new operator will be the first leisure venue at Three Chamberlain Square, a building with a unique, low carbon design, and accreditations that underlines its holistic commitment to sustainability and workplace wellbeing. 

It will bring a whole new offering to the city and the Paradise estate, which is already home to Dishoom, Albert’s Schloss, Rosa’s Thai, F1®Arcade, La Bellezza, and Cow & Sow.

Founded in 1994 by half-Japanese, half-Danish, brothers Jens and Kim Rahbek, and Thor Anderson in Copenhagen, SticksʹnʹSushi is one of Denmark’s most established and respected restaurant groups – with sites in Denmark, Germany and the UK. 

The new restaurant will span an expansive ground-floor space with an adjoining terrace, large bar area and private dining. With room for up to 250 guests, it will accommodate both small and larger groups for drinking and dining in the heart of the city.

Designed by Danish practice OEO Studio – known for its work on Noma Kyoto, and more recently, Sticks’n’Sushi Tivoli Gardens, Copenhagen – the space will draw on Japanese architectural principles while incorporating Scandinavian design.

Driven by a clear commitment to learning, development and wellbeing, SticksʹnʹSushi credits its success to its people; and the new opening will see the team expand further with up to 60 new positions created for the Birmingham restaurant. 

On the menu, expect the signature dishes that have built Sticks’n’Sushi’s loyal following – guests can expect sharing dishes of sushi, sashimi, salads and grilled sticks; available à la carte or in generous set menus, for both dine in and takeaway.

From the grill, highlights come in the form of Gindara No Miso, miso-glazed black cod, Iberico Secreto; miso-cured black Iberian pork, and Ramu Niku, lamb with garlic butter, spring onion and soy sauce.

Complementing the food menu, the drinks list delivers a curated selection of sake, Japanese teas, contemporary cocktails, premium spirits, and beer, including the brand’s Japanese Rice Lager – a collaboration with Danish brewery Mikkeller.

Whether stopping by for a quick lunch, sharing plates over cocktails, or settling in for one of the restaurant’s generous set menus, there’s something for every occasion.

Paradise Birmingham marks a £1.2 billion investment with up to eight new buildings and three new public squares. It also creates new connections across the city centre, both north-south as well as east-west, while re-invigorating the civic heart of the city.
